Matcha is NOT your typical green tea. Although both Matcha and green tea come from the same plant Camellia sinensis, Matcha tea is much more nutrient-dense than green tea. You will be able to recognize Matcha from its much brighter green color and better taste (almost no bitter after-taste). Comparing nutrients, 1 cup of Matcha tea = 10-15 cups of green tea, approximately.
The tea bushes for Matcha are grown in shade (sheltered from direct sunlight), thus leaving the leaves with a brighter shade of green and higher amounts of chlorophyll and L-theanine amino acid. L-theanine amino acid is known to reduce anxiety and stress, and when combined with caffeine, induces a calmer, yet more alert, state of mind.
The finest Matcha is produced from young and tender leaves hand-picked during the very first harvest of the season (first flush). The tea leaves are then steamed, dried and then milled into fine Matcha powder. First-flush Matcha is the Matcha of choice, as it contains significantly more chlorophyll and amino acids (including L-theanine) than the leaves that are picked later in the season. The more chlorophyll, the more vibrant green the powder will be. And the more L-theanine amino acid, the sweeter (umami plant sweetness) the Matcha will taste.
